Orange you glad I said banana?
No. There are no oranges in this post, but there are bananas!
Between cook outs and hockey games [did I mention my awesome friend Seth scored us third row seats for the predators game Sunday?!], I did not eat my best this weekend, so I was desperate for some veggies [but did not want to go to the store] today. All day I kept going through my head of what I should make for dinner…
Bean and...

Is this real?
If you have a crush on a girl, do not text nor tell her any of the following statements: 01. “I have been in jail.” 02. “I have Bipolar Disorder.” 03. “I am having a colonoscopy on Friday.”
What is my life?

Grown up MAC n' Cheeze.
Today, I was at my first ever basic training for MAC and it was absolutely amazing. I am so lucky to work for such a fantastic company…I am so thankful for it introducing me to some of the most incredible, thoughtful, unique, caring, creative, genuine, beautiful, and talented people I have ever and will ever meet.
Maybe it was the fact all day long, I kept hearing the word “mac”...

01. Obsessing over Kurt Cobain in stripes. 02. Smelling my hair that reeks of burnt Kale chips. Oops. 03. Needing to do laundry. 04. Feeling embarrassed that I still watch Degrassi on Friday nights. Still. After 7 years. 05. Reliving last night’s hockey game. 06. Reading Missed Connections. 07. Planning tomorrow’s meals. 08. Hoping tomorrow goes better than my most recent Saturdays....

You can never go wrong with pizza...but you can...
Today I woke up and ate one of my vegan red velvet cupcakes…which was kind of a mistake. I normally eat almond butter on toast or fruit or kashi go lean with almond milk for breakfast. My stomach was not happy with all of that sugar [and the chunk of beet my terribly blender missed]. After I let the cupcake digest, I had an orange and a couple of carrots with some hummus and I felt...

Mama Pea's Vegan Red Velvet Cupcakes.
My favourite blog of all time is that of Mama Pea, www.peasandthankyou.com. For Valentine’s day she posted a gorgeous recipe for some vegan red velvet cupcakes…I cannot believe I actually made them!
This was my first time ever baking anything from scratch alone. I am a terrible cook. Honestly. Most of the things I make have to do with preparation, not cooking, so I was a little...

Tacos!
It was absolutely gorgeous today in Nashville…almost 70 degrees! I went to English, then Biology, then had a lovely meal of avocado and cucumber sushi rolls, then to lab, and then to the supermarket! I am the only 21 year old I know who gets this excited about making the trek to Trader Joes and Whole Foods.
Have I mentioned how much I LOVE Trader Joes and how I can get a whole bag of...

The Wild Cow.
Last Friday my newly vegan friend, Hannah, and I went to the Wild Cow in East Nashville. It was absolutely amazing! I only recently heard about this vegan and gluten free friendly restaurant a couple of weeks ago and, after looking at the website and reading the menu, I knew I had to give it a try.
First up: vegan queso. Hannah and I knew we had to get queso…pre-veganism one of our...

Fun with Tempeh Bacon!
Soo, this past week I was snowed in with my grandmother and my little sister. As Bailey and I traipsed downstairs, exhausted after a long night of Degrassi watching, our omni grandmother offered us bacon sandwiches, which we declined. As I was eating some toasted Ezekiel bread and with almond butter and a banana and Bailey was toasting a bagel with some strawberry cream cheese, I casually...

Verde.
On Sunday, superbowl Sunday, I did not watch the superbowl nor did I go to a superbowl party and engorge myself on Doritos and hot wings. I did, however, decide to finally cook roasted brussels sprouts for the first time. I am 100% glad I did.
First I decided to make my favourite green beans in the whole world. I am telling you, these are amazing. So amazing that I almost ate the entire plate of...

"Wait, you can eat turkey right?"
If you do not eat animals, how many times have you been asked this question? I can honestly say I get asked this question at least once a week by my omni grandmother with whom I live. We are currently snowed in and my little sister, who is a vegetarian, said she was hungry so our grandmother started looking in the refrigerator naming off things for her to eat.
“Bacon? “Turkey...

Adventures With Daiya Cheeze!
Being vegan, I have not had cheese in a long time…nor do I really crave it that often [aside from my recent alfredo sauce craving!], but I have heard other vegans rant and rave about Daiya Cheeze. I have always been iffy about trying vegan cheeze, but after seeing so many blogs with people using it, I decided to give it a try.
I went to my local Whole Foods this past week to pick up some...
